Chili pepper is a common household kitchen staple that can turn a drab dish to a hot, mouth-watering meal. Chili pepper is sometimes referred to as a vegetable though it is most often considered a spice and a meal appetizer. Some countries and regions treat chili pepper as a table sauce where it is directly eaten with the dish. Yes! It sounds hot isnt it? Chili peppers have many varieties for different meal applications. Some people cant ea their food without chili. A meal is never a meal without chili.

Chili pepper has a chemical composition called Capsaicin that is responsible for its hot flavor that characterizes a slight to medium burning sensation in the mouth. Capsaicin can be effectively washed down with milk (not water), as milk is a perfect neutralizer for Capsaicin. Chili peppers are also used in medicine preparations. Chili peppers come in different variations such as: jalapeno, habanero, tabasco, cayenne, etc. The types of chili also range from sweet peppers, hot peppers and bell peppers.

Chili cook offs are done in Arizona to celebrate this famous spice. Some organizations such as the Chili Appreciation Society International, Inc. (CASI) had been promoting this kitchen recipe wonder to be the National Food of the United States of America. They are harvesting funds through cook offs for charity and public awareness through education of chili. They wanted to promote to the public the historical and cultural significance of chili.

Cook offs are always held with contests on who has the best chili recipe. Some criteria for judging the best tasting chili dish are: aroma, red color, consistency, taste (of course!) and aftertaste.

A lot of recipes can be made using chili as the main ingredient. One classic chili recipe is the famous Chili con Carne which is actually translated in English as Chili and Meat. Chili con carne is widely believed to have originated from Mexico but tracing down its roots point to the American State, Texas.
